first up, I would leave out the restrictor [thermostat] and concentrate on heating the oil in the tank.
OR
heating the motor water.

What should a Pinto run its oil temp at?

80-100c would be fine
With the amount of oil you'll have with decent sized clearances and a decent oil your pinto probably wont have an issue as you wont be running at full noise for long enough as with decent oil in it it will flow well enough at lower temps and just monitor the temps when you're and see from there as my own engine now doesn't run hot enough even on the rolling road and the only cooler I've got is in the bottom of the radiator tank

OK Danny. I guess the longest stage I may do would be no more than 10 - 15 minutes flat out. As you say, not really enough time to over heat the oil. With the 2 gallon tank 2/3 full and say another 2 litres in the lines I will have 7 litres of oil in the system.
Not sure about when I do track days though. Not sure if say 6 laps of Mallala would overheat the oil on a hot day.
I want to build the car once and not fark around with it in the future. So either oil cooler now or never an oil cooler!!!

Water to oil,..... in the bottom of the radiator, which also helps get the oil temp up.

80-90degrees c seems to be the norm and my thing on the rollers and at Morgan park didn't get over 68 which is a concern
