Changing the muffler will make some difference, whether it's a big difference is debatable. It will depend on the state of tune of the engine.
Yes the decibels will jump. Even a stock motor is loud when you have no exhaust so a straight through will definitely up the ante a bit.
And as for the muffler, put it as far back as possible. Under the boot floor would be my preference.
